Mail Formatting Gone from the Contacts Setup

I have just started using Windows mail on my laptop and wanted to set up 
certain accounts so that when I send from them to certain email addresses I 
send as 'Plain Text'.  

There used to be a tick box on the old OE Add Contact window, but it's 
disappeared with Wondows Mail.

Is there a way of setting this up? If so, how?

Any help gratefully appreciated.

Mysterious e-mails
i keep getting e-mails that look and appear that they have come from people either in my phone book or in some cases from people that have ligitimately e-mailed me or that I have e-mailed. In fact the e-mail has come from somewhere else even though the sender appears to be ligitimate. Most of these e-mails are dated 3 or four weeks old and show that they have been read in my inbox. Lost Outlook contacts
I recently backed up my hard drive on DVD, then also kept the entire contents to another HD. I then reformated my C; drive, and reinstalled all of my programs. Cannot open Excel attachment from e-mail when Excel is already ope
This is driving me crazy. If I already have Excel open (with or with out a spreadsheet open) I cannot open an Excel spreadsheet attached to an e-mail. Outlook 2007 Install gone wrong
We recently switched e-mail hosts and I successfully (mostly) switched over my company's accounts from a POP server to our new IMAP server. Mail will not Send/Receive automatically

Mail enabled public folders / spam
Hello, For each of my users inbox I have exchange mark mail with the SCL and move anything over my threshold into their junk mail folder. This works pretty well and eliminates nearly all of the spam we get. I have not thus far managed to work out how to get this working for mail enabled public folders. Format for credit card numbers
I've tried a custom format for entering credit card numbers (four groups of four digits, separated by dashes: xxxx-xxxx-xxxx-xxxx. I have tried to use ####-####-####-#### and 0000-0000-0000-0000 but each of these causes the last digit to change to zero. So if I enter 5415779800902512 I get 5415-7798-0090-2510. Exporting contacts in a csv file
I am a mysterious problem exporting my contacts as csv file. The resulting file has only 58 contacts out of almost 1200 contacts in my outlook. These contacts appear to be the last 58 contacts added. WLM Beta Junk Mail Filter
The junk mail filters has stopped filtering mail. The address shows in the list of blocked addresses but the mail is not filtered. The filter worked fine in WLM but I don't think it has worked since I loaded the Beta. Where exactly are you looking when you say the address is the same as the one in your Blocked Senders? The From line may not show the true entry, look at the entry in the From field you see after pressing Ctrl+F3 on that message. Varying format
Is there any way to format a cell differently depending on the number of decimal places typed in? Mail Merge to business cards
I am working on a huge project for work, creating Employee Photo ID cards. I have created a database for all the information including a hyperlink column for the photos. and am using business cards to print them on. I have two frustrating problems... 1. Remade Folders, Now Old Email Gone
I created a couple new profiles so I could separate my work and personal emails when I work from home. At the end of the process, when prompted by Outlook to remake my folders, I foolishly remade my folders. Now, all my old emails which were in my Inbox have gone missing. In Outlook 2002, I can easily set the Day View to display the time increments in 15 minute blocks, but on the Appointments form, the Start and End Times available on the drop-down menus, respectively, are in 30 minute increment blocks only.
