How do copy text from a picture/image & make it available for edi.

I am trying to copy text from an image. And I want that text to be copied to 
Excel/word not as a picture or image but as a text

this cannot be done with excel. the text on the image is 
part of the image and excel only see the total image not 
individual parts of the image so it cannot seperate.

Once I use the Text to columns feature in Excel, it seems there is no way to turn it off. How do text capture tools work?
Here are two examples of this technology. Sounds like they will have to involve OCR, which works fine for standard fonts but probably won't work with fancy fonts. Ordering by number and text
I use a report to print out checklists that in the detail section have item number to delineate each checklist item. The item numbers as an example are 1-1, 1-2, 1-2a, 1-2b, or 2-1, 2-2, 2-3, 2-3a, 2-3b and so on. The report is grouped by checklist section and the grouping works perfectly but when the report is printed the item numbers are ordered in this order 1-1, 1-10, 1-11, 1-2, 1-3, 1-3a, 1-3b, 1-4, 1-5, 1-6, 1-7, 1-9. Obviously I want the the order to be in proper numerical sequence where 1-10 comes after 1-9. but even replacing the '-' with a decimal point doesn't ...

RMS 2.0 matrix dimensions are annoying, but help is available
For reasons I don't understand, MS saw fit in RMS 2.0 to use dimensions data for matrix components that is far less accessible to users than Sub Descriptions are. For instance, I can't edit assign a dimension value to an existing item I have added to a matrix. Picture in message appears bigger than original
I'm using Outlook 2003. I have this problem with adding pictures in messages. When ever I add a picture in a message(not as attachment), the picture looks much bigger than it actually is. The funny thing is that, when I check the size of the image in the message it shows to be the same size as what it should be, say 1 inch height and width.
