How do I lower the backup task priority? Do I just add /low in the
command line?

I assume you are using the SBS Backup?
if so Why do you want the Task to take a lower priority?
Are you backing up during the day?

No But something tends to go wrong from time to time when the server
stops to respond in the morning till the backup disk gets removed.
There is no indication as to what exactly happens. No errors in the
event log, no memory dumps the log is not created and the only way to
get to the server is a hard restart. Hope that lowering the backup job
priority will give me access to the server next time the backup fails
so I can see what's going on.

Are there any errors in logs?
However I suggest you get at least a USB 2.0 external Hard drive
and use the SBS backup
And see if that works for you.
The SBS backup will properly backup your WHOLE server
and just just bits and parts...

What is your current memory usage?
Have you tried another External USB Drive.
(Different cable also)
This almost sounds like a hardware issue...
