Incoming email works but list System Account as sender (WSS 3.0)

Very new to WSS....running WSS 3.0 in single server configuration on a
single domain.  I have incoming email working with email enabled
document libraries but the documents are showing up as posted by
"System Account" instead of the AD user.  When setting the policy as
"Accept....based on document library permissions", nothing shows up in
the library even though my AD account has full rights...I have to use
"Accept email messages from any sender" option for anything to show
up.  I'm not using "Sharepoint Directory Management Service"...is this
why?   Or should this still work?  

If that is the reason, since I'm single server, my services are
running under the Network Service account...so I can't delegate that
on the AD container....how can I switch to a domain account?

Update....checking the eml file in the drop location I'm seeing the
x-sender entry looks like
"BTV1==7402bb04155==myemailaddress@mynetwork.com"
If I take out the BTV1==...=== part and just use my email address the
documents show up correctly as posted by me.  Has anyone seen that
before and know how to resolve?

Might as well finish this off....realized my emails were relaying to
our Barracuda appliance first then to the WSS server.  Sending
straight from the Exchange server fixed the issue.
