Outlook 2007
Under my hotmail account in Sent Items the addressee name always shows my
name, not the person to whom the email was sent. What's wrong?

There is no Addressee field. There are From and To fields depending on what
fields you choose to display (depends on which view you choose or how you
have customized it).

In OL2003 to customize the view, right-click on the column header row and
select Field Chooser. Add whatever fields you want by dragging them into
the header row where you want them placed. To delete a field, drag it off
the header row. Drag the fields to whatever position you want in the header
row. Is Field Chooser no longer an option when right-clicking on the header
row in OL2007?

You might want to include both the From and To fields in the view. If you
have more than one account defined in Outlook, the From field *might* show
from what account you sent that e-mail; however, it might only show your
Name which could be the same in each account you defined in Outlook (i.e.,
same personal Name although different e-mail addresses). To see what
account through which you sent an e-mail, you might want to replace the From
field with the E-mail Account field.

Switch the view to Sent To.
