Is it possible to make this change within office.  My mother s old and set in 
her ways and is used to the 2003 format from her previous job but i have 2007 
and it is hard for her to figure out.

No, unless you purchase or find a free 3rd party add-on to create the old 
menu interface you are stuck with the ribbon, like it or not with Office 
2007 and later.
