Has there been any testing on how fast MS CRM 3.0 runs over dial-up? Got a
client with remote sales staff and they will only ever access CRM twice a day
over dial-up and they are concerned about the speed. I also wanted to
confirm that they will need to set up a VPN to ensure security.

My guess is that this will pose some problems. I know the v3.- client is
better tuned, but assuming you are talking about CRM fro Outlook in Offline
mode synching over a dialup. The amount of data being uploaded won't be too
bad, but the process of going back offline will probably be slow. Also,
having a flaky dial-up connection to contend with during this process could
cause additional problems with disconnects.
A VPN is a must to get this to work. I would also recommend getting in
touch with MBS to verify the support issues that this may cause.
