In CRM3 how can you customize the Print View of the records/activities?

Unfortunately I don't think you can customise only the Print View, as it's 
just an alternative rendering of the entity form

Hi,
Yes, David is right. One work around is to develop a SRS report in desired 
format and than take report's print instead of using default print 
functionality. (use report from within the entity form)
