We primarily use the Outlook Client for sending emails however are now want
to emails via the web client. The Outlook Client is definitely sending
tracked emails fine and addind activities in records. When sending from the
web client the emails get added to history but are not arriving at the
destination.
It almost like the CRM server doesn't know where the CRM Router is? Perhaps
I should just reinstall the router??

The router has nothing to do with outgoing email it only processes incomming
email. Sending e-mail is done using the mail server which you specified
during the installation of the crm server.
You may want to check if your exchange server allows relaying from your crm
server.

So perhaps the CRM server was specified as the SMTP server.
Check those queues and see if anythng is unresolved.
